There are probably just as many kinds of fresh noodles as there are dried. Made from all kinds of ingredients and coming in many shapes, sizes and lengths with just as many uses for each. I can't go through them all but will show you the ones I use most and where I use them.
These are "fresh" wheat, ready-to-use wrappers. You can find them in the refrigerated or frozen section of you local Asian market. I like using the round thicker ones for potstickers as they hold up to pan frying and steaming better than thinner skinned wrappers. Square, thin wrappers are great for wontons and dumplings that are steamed or boiled. Fresh noodles are found in all kinds of thicknesses and shapes. If it is frozen, defrost in the refrigerator the night before then cook in a pot of boiling salted water. Drain and you're ready to use them in soups, stir frys or whatever you want!
