Sugar

I know it sounds silly to make a post on sugar but there are some unusual sugars in Asian recipes. I just wanted to show a picture of some of them. If you can find them, they really do make the recipe more authentic.




Rock Sugar


These irregularly shape chunks of sugar are made from evaporated sugar cane juice. They add a nice sheen to braised dishes. If you cannot find this product, you could substitute with granulated white sugar.







Brown Sugar Slabs


This is also sugar made from sugar cane juice but without molasses removed. It has a deeper flavor and used in dishes like Chinese New Year nian go - new year's cake. If you cannot find this product, substitute with brown sugar.
