Sweet Fillings - Coconut

This is the original/authentic filling for baked Cantonese "gai mei bao". It is sweet and the coconut gives the chew a bit of crispiness. So delicious!

This was the bao that my girls always requested of my mom whenever we visited NY. We'd bring home a box with other favorites and have wonderful Chinese bakery breakfasts and snacks for a couple of days. So sad when they were all gone.

Coconut Filling

Suggested filling in baked baos and mochi.

Ingredients (makes about 1 1/4 cups)

2 1/2 cups coconut flakes

2 Tbs granulated sugar

2 Tbs melted butter

2 large egg yolks


Process the coconut and sugar in a blender or food processor until very fine. Transfer to a small bowl. Stir in the melted butter and egg yolk until it has a paste like consistency. Use immediately as a filling or transfer to a zip top bag or an airtight container and use within 3 days.
